Crescent Rolls


I use a Kitchen Aid mixer, but this can be adapted if you don’t have one!

1.       Mix together in a small bowl or cup and allow to sit for 10 minutes:
·         2 T. yeast
·         ¼ c. + 1 T. warm water

2.       Mix together very well in separate bowl (I use my KA mixer bowl):
·         3 eggs
·         ½ c. oil
·         ½ c. sugar

3.      Warm 1 c. milk in microwave for 1 minute.  Add milk and yeast mixture to egg mixture and combine (“stir” setting on KA mixer).   

4.       Add 5 - 5 ½ c. all-purpose flour a cup at a time until combined and dough forms a ball (should be stretchy and clean the sides of the bowl, but not too sticky).  If using a KA mixer, you’ll use the dough hook and mix/knead 5 minutes on speed 2.  Let dough rise 2 hours in a greased bowl in a warm place.* 

5.      Separate dough into three balls.  Roll out each ball until it’s the size of a dinner plate.  Use pizza cutter or knife to cut each circle into eight wedges.  Roll each wedge from the big end to the skinny end, forming a crescent roll shape.  Place rolls on a greased cookie sheet, seam-side down.  Allow to rise under a clean dish towel while the oven preheats to 400°.  Bake 6 minutes on bottom shelf, then 5 minutes on middle shelf.  Make sure rolls are golden brown before taking them out.  Brush tops with melted butter.

* While I’m preparing my dough, I turn my oven on the lowest setting, and then turn it off.  This creates the perfect “warm” environment for letting dough rise!
